Our weekday guests usually find in their breakfast baskets a little surprise- a mini-quiche! Have had many wonderful compliments on these. They’re great hot out of the oven, and they’re really good at room temperature too. Recently many of our guests have asked how to make them. Here’s the base recipe, but remember- you can add lots of interesting stuff to make them your own.
This is so simple. To make two, preheat oven to 400. Spray the ramekins with pam. Mix together two eggs, 1/4 cup of cream. 2 tbs of two different types of shredded cheese. salt & pepper, parsley and a couple of shakes of Mrs Dashes Garlic seasoning and then spoon into the ramekins. Top with 1tbs cheddar cheese. Bake for 15-20 min. After they come out of the oven, just add a touch of paprika. Remember, they will fall. You can also add a little pre cooked sausage or chopped bacon, or red pepper, or… go nuts. enjoy.
